A Bite of Something Yummy Truffles

Have you ever had those times when you stand in front of the fridge and think to yourself: ‘I want a bit of something yummy, but I don’t know what I feel like having.’

As a triathlete, this happens to me regularly. The hardest time is between meals and training sessions, when I want a little bite of something yummy, but I don’t want to eat a lot. I concocted this recipe after having some particularly scrumptious salted caramel protein balls while on holiday in Australia recently. I hope you enjoy them as much as I do!

200gm medjool dates (12-13 dates) pitted & roughly chopped

75gm raw cashews

30gm fine desiccated coconut (plus extra for rolling)

50gm pea protein powder (alternatively use LSA meal)

2 tbsp tahini or coconut oil

2 tsp vanilla

½ tsp rock/sea salt

  1. Put 1st 3 ingredients into food processor and blend until a rough breadcrumb consistency
  2. Add the remaining ingredients and process until mixture is coming together – if necessary add up to 1 tablespoon water to help it bind
  3. Take a medium spoonful of mix and roll between your palms into a tight ball – roll in coconut
  4. Keep refrigerated to preserve ingredients

Makes 12 truffles

Approximate nutritional values in 1 truffle: Carbs = 13gm, Protein = 3.5gm, Fat = 4.5gm
