Here in New Zealand the Covid19 lockdown has left supermarket shelves bare of many food items, especially anything with a long shelf life.
I devour a lot of nut butters, and one of my favourites to buy has been something called Everything Butter, which like its name, has all sorts of nutty goodness in its contents. I’ve been unable to buy it recently, so decided to come up with my own version using what I had available in my pantry, which includes seeds for their special properties. Keeping the walnuts and seeds raw maintains the quality of their heat sensitive oil content too.
This butter is full of essential mono- and polyunsaturated fats, as well as important micro-nutrients like folate, niacin, vitamin E, and the minerals zinc, selenium and potassium.
100gm peanuts, roasted
100gm cashews, roasted
100gm almonds, roasted
¼ cup virgin oil of choice (avocado, macadamia, olive etc)
Blend all well in food processor – then add:
50gm walnuts, raw
50gm pumpkin seeds, raw
50gm sunflower seeds, raw
Salt to taste
Blitz to desired consistency (crunchy or smooth) and add another 1-2 tbsp oil depending on how spreadable you like it to be.
